At Roy’s Hawaiian Fusion Cuisine, our menu features the finest seafood with a focus on delicacies from the oceans around Hawaii. Each creation is a fusion of flavors found in our freshest local ingredients with European sauces and bold Asian spices and served with the spirit of Aloha, creating a dining experience that leaves you feeling like you’ve found paradise. The Flamingo restaurant is located about 1 1/2 miles east of the famous Las Vegas Strip, on Flamingo Rd. and features an exhibition kitchen, chef’s /sushi counter, rooms for private events, and a spacious dining room. In the kitchen, Chef Percy Oani brings his imagination and artistry to the plate every night. Growing up in Southern California and having lived in Hawaii, Percy has learned to capture the essence of Hawaiian Fusion Cooking.
